This is the most nutritious-and-healthy-while-still-being-tasty Carrot cake ever!!
Ingredients
Wet
- 3 ripe bananas (I prefer cavendish)
- 2 carrots, grated
- 10 dates, finely chopped
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup sultanas
- Juice of one orange
Dry
- 1 cup almond meal
- 1/2 cup quinoa flakes or meal
- 1/2 cup oatmeal
- 2 tbs flaxmeal
- 1 tsp ground cinnamon
- 1 tsp sea salt
- 1 tsp baking powder
- 1/2 tsp bicarb soda
- 1/3 cup walnuts, roughly chopped
Icing (optional)
- 250g light cream cheese
- 2-3 tbs maple syrup
Soak the sultanas in the orange juice for 30 minutes.
Preheat the oven to 170 degrees celcius.
In a large bowl combine all the dry ingredients except for the walnuts.
Drain the sultanas from the orange juice, and add them into a medium sized bowl with the remainder of the wet ingredients. Combine the wet ingredients and add them to the bowl of of ingredients. Finally, fold in the walnuts.
Lightly grease a cake tin and line the bottom of it with baking paper. Pour the batter in, and if you intend to ice it smooth the top over.
Place in the oven and bake for 45 minutes.
After you’re happy with the skewer test remove the cake from the tin and allow it to cool on a wire rack for 30 minutes if you intend to ice it.
For the icing mix the cream cheese together with the maple until it’s smooth, then layer it over the top of the cake.
I love this cake! It’s guilt free and you can substitute the oatmeal and quinoa flakes for any form of flour you have on hand, or for more almond meal if you want a gluten free or more paleo-friendly option.

Strawberry-Grapefruit Smoothie
Makes three 1 3/4-cup servingsI admit that I may be biased because I’ve been on a grapefruit kick recently, but I really enjoyed this smoothie. It was both sweet and tart, and even though it only has a few ingredients, the fiber from the apple makes it filling. This is a “big batch” recipe designed to be made ahead of time to provide one person with three days worth of smoothies. You can store in the fridge and either shake well or give a whirl in the blender before serving each smoothie.
INGREDIENTS
1 grapefruit, peeled, seeded, and chopped
2 cups hulled fresh or frozen strawberries
1 sweet apple (such as Honeycrisp or Pink Lady), cored and chopped
1-inch fresh ginger, peeled and chopped
INSTRUCTIONS
Step One: Combine all ingredients, plus 1 cup water, in a blender and process until smooth.

Tuna Patty’s
1 Can of Tuna (4oz)
1 TBS Ground Flaxseed
3 TBS Egg Whites
1 TBS chopped onion
1 TBS chopped parsley
1/2 Clove Garlic & some Garlic Powder
1/2 TBS Lemon Juice
Pinch of Salt & Pepper
Mix together in a bowl and form into two pattys with your hands. Bake in the oven for 20 Min. at 400 degrees OR place on the frying pan 6-7 min. on each side :)
I dipped mine in some Grey Poupon Mustard mixed with chopped onions.
Nutrition: Calories: 206 Carbs: 5g Fat:4g Protein:39g
Other serving options:
Protein Style - Wrap in lettuce or put on a bed of salad (like spinach!) chop up some tomatoes and sprinkle with some lemon juice!
Between two buns - either burger, whole wheat bread, english muffins & add some burger toppings (onions, pickles, tomatoes, lettuce)

Rich Protein Mocha “Frappuccino”
- 1 Scoop Chocolate protein powder
- 1 packet instant coffee grounds
- 1 cup unsweetened chocolate almond milk (you could also use coffee)
- 1 tablespoon unsweetened baking cocoa (optional)
- 1 cup ice
